Smoked sweet peppers from One Straw Farm, then dried and ground into powder.  Amazing smoky-sweet flavor provides substance to many dishes and meats.  Inspired by Spanish Pimentón Dulce.

The process to make our Pimentón is time-consuming.  First, we grow all of the sweet peppers at One Straw Farm--a mixture of pimentos and Italian frying peppers.  We harvest only fully ripe peppers, then roast them in our chile roaster to cook them a bit and get the peppers ready for smoking.  Then each pepper has its seeds and stem removed, and then they are smoked over pinon for 4 hours.  2-3 days in the dehydrator and finally milled into a fine, rich red and smoky powder.  It takes about 16 pounds of sweet peppers to make 1 pound of finished Pimentón Dulce, or 2 pounds in a 2 oz. jar.
